Vegetable Pulao

Prep time: 15 minutes  Cooking time: 15 minutes Serves: INGREDIENTS: Rice (cooked) 4 cups Onions (chopped small) 1/2 cup Coriander (chopped) 1/4 cup Jeera 1 tsp Salt 2 tsp Garam masala powder 1 tsp Oil/ ghee 2 tbsp Parboiled vegetables: French beans (chopped small) 1/4 cup  Carrots (chopped small cube shape) 1/4 cup

Corn 1/4 cup

Green Peas 1/4 cup Cauliflower  florets (chopped small) 1/4 cup (Optional) Potatoes (chopped small cube shape) 1/4 cup (Optional)

PREPARATION  Heat a nonstick pan with oil /ghee, then add jeera fry it for a minute then add the onions and fry them till they try translucent (don't turn them brown).

Add the parboiled vegetables to the fried onions and fry all the vegetables for around 3-4 minutes, cover it for 1 minute and let them cook now and salt. Now add the cooked rice and give it a gentle mix (don't over mix) sprinkle the garam masala powder and give it a last stir. Garnish it with freshly chopped coriander leaves.  Enjoy the Vegetable (colorful) rice with some Dal Fry/Plain Kadhi/ Curry of Choice
