Leche frita is a Spanish sweet typical of northern Spain. It is made by cooking flour with milk and sugar until it thickens to a firm dough which is then portioned, fried and served with a sugar glaze and cinnamon powder. *

INGREDIENTS:
Milk 3 cups
Lemon skin (very thin slices only cut the yellow part and now the white part) 1 lemon
Cinnamon stick 1 inch
Milk powder 1 cup
Cornstarch 1/2 cup
Sugar 1/2 cup
Breadcrumbs 1.5 cup
All-purpose flour 1/3 cup
Powdered sugar 2 tbsp + 1/2 cup
Water 1/2 cup
Cinnamon powder 1 tsp
Oil for frying
PREPARATION :
In a heavy-bottomed saucepan, take 2 cups of milk add the lemon skin and cinnamon stick, boil it for 10 minutes.
Then add the 1/2 cup sugar to the milk, stir continuously till the sugar dissolves, then remove the lemon skin and cinnamon stick from the milk.
In a separate bowl mix 1 cup of milk with 1/2 cup of cornstarch and make a lump-free mixture then slowly add the cornstarch milk mixture to the boiling milk.
Keep on stirring the milk as it might sit because of the cornstarch and get burnt.
Around 4 minutes the milk will turn into thick paste, now remove it from flame and transfer the mixture into a greased vessel and pat the mixture and give it a smooth finish.
Let the mixture stay outside for 15 minutes then cover it with a cling wrap and refrigerate it for atleast 45 minutes.
Remove and de-mold it on a chopping board, cut them into the desired shape in have cut into 14 rectangles.
In a bowl mix 1/3 cup flour, 2 tbsp of powdered sugar and water, be careful while adding water to make a slurry u might need a little more than 1/2 cup of water.
On another plate take the breadcrumbs. In a separate plate mix, 1/2 cup powdered sugar and cinnamon powder and keep aside.
Now heat oil in a frying pan.
Take one piece of the milk mixture dip it into the slurry and then coat it with breadcrumbs, keep aside and finish the remaining pieces following the same steps.
Now shallow fry the pieces till golden brown, fry all and allow them to cool down for around 15 -20 minutes.
Then coat each of the pieces into the sugar-cinnamon mix from all sides and keep aside, follow the same for all the pieces.
