A Thokku is a type of South-Indian pickle, which is made with grated vegetables, unlikely the bite-sized chunks of vegetables or even meat and seafood in pickles. There are various Thokku varieties that can be made with Brinjal, coriander, onion, tomatoes, Gongurra leaves.

INGREDIENTS:
Small Brinjal (chopped) 7
Coriander leaves 3 sprigs
Onions (medium-sized) 2
Tomatoes (ripe) 2
Ginger garlic paste 1 tbsp
Tamarind paste 2 tbsp
Jaggery 1 tbsp
Red chili powder 2 tsp
Coriander powder 2 tsp
Salt as per taste
Turmeric powder 1 tsp
Cardamom pods 3
Fenugreek seeds 1/4 tsp
Mustard seeds 1/4 tsp
Cumin seeds 1/2 tsp
Sesame oil/ Refined oil 3 tbsp
Water 1/2 cup
PREPARATION:
Heat oil in a pressure pan until hot. Add in the fenugreek seeds, mustard seeds, cardamom, and cumin seeds.
Add in the sliced onions and fry till the onions are soft. Add in the tomatoes and ginger garlic paste. Fry for a couple of minutes.
Add in the red chili powder, coriander powder, turmeric powder, jaggery, and salt. Add in 2 tablespoons of tamarind paste. Fry for a minute. Add in the chopped brinjal and half a cup of water.
Cover the pressure pan and cook for two whistles. Remove from heat and wait for the pressure to release naturally.
You can enjoy this sweet-tangy recipe with rice or chappati.
