INGREDIENTS:
Rice 3 cups
Urad dal 1 cup
Green chillies (crushed) 1tbsp
Ginger (grated) 1 tbsp
Salt to taste
Fruit salt (eno) 1 tsp
Curry leaves 6-7
Mustard seeds 2 tsp
Sesame seeds 1 tsp
Green chillies 2 (slit)
Freshly grated coconut 1 tbsp (optional)
Oil 1 tbsp
Coriander leaves (chopped)
PREPARATION :
Firstly we need to mix the rice and dal in a bowl wash them well and soak them in enough water for around 5-6 hours.
After that u need to grind the soaked dal-rice with little water to a smooth batter.
Keep the batter in a warm place for 7-8 hours/overnight to ferment.
Not get your steamer ready and grease the plate with little oil in which u would be steaming the Dhokla.
In the fermented batter add the salt, crushed green chillies, grated ginger and the fruit salt give it a good stir.
Now pour some of the batter in the grease plate and place it in the steamer for 10-12 minutes. Then cut them into small pieces.
Repeat the process until all the batter is used.
Now in a small pan heat the oil, add the mustard seeds, sesame seeds, slit green chillies and curry leaves fry everything for a minute or two.
Add the oil and the fried seeds over the prepared Dhokla.
Garnish it with coriander leaves and grated coconut.
Serve it with green chutney and ginger tea😋.
