INGREDIENTS:
Basmati rice / Govind bhog rice 1 cup
Yellow Moong dal 1 cup
Ginger (grated) 1 inch
Tomatoes (cut into cubes) 2 small
Green chillies (slit) 2
Turmeric powder 1/2 tsp
Red chili powder 3/4 tsp
Potatoes (peeled and cut into halves)2 medium size
Green peas 1/2 cup
Cauliflower 2 cups ( big chunk florets)
Carrot 1 cup (diced)
Asafoetida (hing) 1/2 tsp (optional)
Cinnamon (dalchini) 1 inch
Green cardamom (choti elaichi) 2
Cloves (Laung) 4
Bay leaf (tej patta) 2
Whole dried chillies 2
Cumin seeds 2 tsp
Ghee/Oil 2 tbsp
Sugar 1/2 tsp (optional)
Water 8 cups ( use hot water)
Salt to taste
PREPARATION:
Rinse and soak rice in water for 30 mins.
In a pan dry roast the moong dal till some of the lentils turn light golden and aromatic, keep on stirring to get uniform roasting and browning.
When the lentils cool, rinse them in water. sprinkle some water on them and keep aside.
Just before you begin tempering, drain both the moong dal as well as rice and keep aside.
Heat ghee or oil in a thick bottom pan and fry potatoes and cauliflower separately and keep it aside.
Then add the whole spices till they become aromatic - cinnamon, cardamom, cloves, bay leaf, dry chilies, and cumin.
Now add the grated ginger and saute for 5-6 seconds or till the raw aroma of the ginger goes away.
Add turmeric, red chili powder and asafoetida and saute for 2-3 seconds.
Then add the tomatoes and green chilies and saute till the tomatoes become soft.
Add the roasted moong dal and saute for 2 minutes, add the drained rice and stir well.
Pour 8 cups water and add salt & sugar.
Let the water come to a boil, now add the fried potatoes, cauliflower and green peas,
stir and then cover the pan and cook it for around 20 -25 minutes, stirring occasionally on medium flame
Once most of the water is dried and everything is cooked well add a big spoon of ghee and garnish it with some freshly chopped coriander leaves.
Serve the vegetable khichdi with fried brinjal or yogurt and some roasted papads by the side 😋.
