Vanilla Cake

Although a simple cake recipe for many, there are a lot of childhood memories related to it. It's my mom's recipe which me and my siblings used to relish. And this was the first cake which I baked as a kid 😃.

Prep time: 10 minutes Cook time: 40 minutes Total time: 50 minutes



All-purpose flour  1 cup/165gms

Powdered Sugar  1 cup/125 gms

Egg  2 / 105 gms

Butter 1/4 cup /55 gms (room temperature)

Milk 1/4 cup

Vanilla essence 2 tsp

Baking soda 1/4 tsp

Salt 1/4 tsp

Lemon juice 1 tsp


Preheat your oven at 180°C.

To prepare the wet mixture, take a mixing bowl add butter, eggs, and powdered sugar; beat the mixture for around 4-5 minutes till it becomes soft and light. Add the milk and vanilla essence whisk it once.

Now add the dry ingredients (the flour, salt, baking powder) into the wet mixture. Ensure you mix it properly. Add lemon juice and give it a good stir.

The cake batter is ready.

Pour the batter into a greased cake tin of any shape.

Bake it for 40 minutes @180°C. (Time may vary depending on your oven, keep a check after 30 minutes).

*Prick the cake with a toothpick to check if it's done. Once done remove the cake tin from the oven.

Now let the cake cool in the tin for 10 minutes, then remove from the tin. If you wish to frost the cake you need to cool it for another 10-15 minutes.

You can enjoy the cake as it is or you can try my yummy 'Vanilla Frosting'😋

*Tip: To check if the cake is done, prick the cake with a toothpick; if the toothpick comes out clean the cake is done.
