My dad owned a restaurant so this is one of the dishes that I learned from the chef...He taught everything with details and clear instructions... I miss my days of training back then

INGREDIENTS:
Cottage cheese (Paneer) 500 gms (cut into cubes)
Onion (cut into cubes) 1 large
Bell pepper (cut into cubes) 1 medium
Green chilies (slit into half) 2
Spring onion 1/2 cup (chopped)
Garlic (chopped) 4 cloves
Salt to taste
Cornflour 2 tbsp
All-purpose flour 2 tbsp
Black pepper to taste
Soy sauce 2 tsp
Green chill sauce 2 tsp
Red sweet chilly sauce 2 tsp
Vinegar 1 tsp
Shezwan sauce 1 tbsp
Oil 3 tbsp
PREPARATION :
In a small bowl mix 2 tbsp of all-purpose flour, 2 tbsp of cornflour, salt, and pepper, now coat each piece of paneer into the dry flour mix and set them aside.
Keep the remaining flour mix aside for making the slurry for the gravy at the end.
In a frying pan, heat 2 tbsp of oil and shallow fry the paneer pieces coated with the flour, keep it aside.
In the same pan using the remaining oil saute the garlic and after one minute, add in the green chilies and fry it for a minute more, now add in half the amount of spring onions and keep aside the remaining half for garnishing.
After few seconds add in the onions and bell pepper cubes fry for 1-2 minutes then add in all the sauces and vinegar, season with some salt and pepper. Saute everything for 2-3 minutes.
Add 1/4 cup of water to the flour mix that we kept aside and make a slurry.
Now add this slurry to the sauteed vegetables and then add 1/2 cup water more to it, allow it to boil for few minutes.
You will see the gravy has thickened now add the fried paneer pieces and give a stir.
Remove Paneer Chilly in a serving dish and garnish it with spring onions.
Enjoy it with Vegetable Fried Rice.
