INGREDIENTS:
For Tahini paste:
White sesame seeds 1/4 cup
Olive oil 2 tbsp
Chickpeas 200 gms
Tahini Paste 1/4 cup
Garlic (chopped) 2-3 big cloves
Olive oil 2 tbsp
Mixed herbs (dry) 1 tsp (optional)
Chilly flakes 1 tsp (optional)
Salt to taste
Lemon juice 1 tbsp
Warm water 1/4 cup
PREPARATION: Soak the chickpeas for 8 hours or overnight, then pressure coke the chickpeas for 4-5 whistles. Let it cool down. In a small pan take the white sesame seeds and roast it for around 2-3 minutes on medium flame and cool it down. In a small mixer, grind the roasted sesame seeds into a fine paste, add 2 tbsp of olive oil and grind it once again. Tahini paste is ready. Keep it aside. Now in a big blending jar add the boiled chickpeas, tahini paste, garlic, chilly flakes, oregano, salt, and lemon juice grind it. Open the jar add 2 tbsp of olive oil and 2 tbsp of hot water, again grind it if it doesn't come to a smooth paste you can add 2 tbsp hot water to it. It has to be a very smooth paste. The hummus is ready, you can garnish it with a little olive oil and some chilli flakes. Enjoy it with Pita bread and Falafal😊.
