Egg Muffins

Prep time : 5 minutes Cook time : 20 minutes Total time : 25 minutes Serves: 12



Eggs 8

Green bell peppers (chopped)  1/4cup

Red bell peppers (chopped)  1/4 cup

Yellow bell peppers (chopped)   1/4 cup

Tomatoes (chopped)  1/4 cup

Spinach (chopped)  1/2 cup

Salt and pepper to taste

Oregano 1 tsp

Oil for brushing


Preheat the oven @180°c.

Take a muffin tray with 12 cases and grease them with some oil.

Mix all the chopped vegetables in a bowl and start filling 1/3 of the each muffin case with the veggies, equally fill up all the 12 cases.

In a separate bowl break all the eggs add salt, pepper and oregano and whisk it well.

Now on to the muffin tray u need to pour the egg mixture till 2/3 of the cases.

Bake it for 20 minutes. Remove, cool it a little and enjoy your breakfast 😊
