Egg Bombs

This is a 30 Minutes recipe that you can make for your kids, as starters breakfast or as evening snacks. This interesting healthy recipe I learned from my 'Bodo Ma'. I share many fond memories from my childhood as well as youth with her and her family. She is an amazing cook with excellent presentation skills. You can follow her Instagram page.


Prep time: 15 minutes Cooking time: 15 minutes Total time: 30 minutes

Note: In this recipe, ingredients need overnight soaking

 

INGREDIENTS:

Green Peas (soaked overnight and boiled) 2 cups

Eggs (hardboiled, peeled and cut into halves) 6

Potatoes (boiled, peeled and mashed) 2 medium size 

Onions (chopped) 1 medium 

Green chillies (chopped) 2

Ginger (chopped) 1 inch

Coriander leaves (chopped) 1/4 cup

Salt and pepper powder to taste

2 tbsp all-purpose flour 

Breadcrumbs for coating

Oil for deep frying

Water


PREPARATION: 

In a mixing bowl mix well the boiled potatoes,  boiled green peas, onions,  green chilies,  ginger, coriander leaves, salt, and pepper.


In a small bowl take the all-purpose flour add water to make a slurry (it should not be too watery)


On a plate take mix the breadcrumbs with salt and pepper and keep it aside.


Now take 1 half egg and a small scoop of potato peas mixture and add them to give the shape of a whole egg. Make all the remaining egg halves using the same procedure. 


Now dip each egg -potatoes mixture balls into the flour slurry and coat it well with the breadcrumbs.


Heat oil for deep frying, once the oil is hot fry each ball till its golden brown color.


Enjoy this unique and tasty snacks with ketchup or any chutney of your choice😋
