Baked Vegetables in White Sauce


Prep time: 10 minutes Cooking time: 20 minutes Total time: 30 minutes

 

INGREDIENTS: 

For White Sauce:

Butter 3 tbsp

All-purpose flour 3 tbsp

Milk 400ml

Salt to taste

Pepper powder 1/2 tsp

Processed cheese 200 gms


For Vegetable preparation:

Olive oil 1 tbsp

Carrort & French beans (diced & blanched) 1/2 cup each

Green peas, Sweet corn & Broccoli florets (blanced) 1/2 cup each

Mushroom & Capsicum (diced) 1/2 cup each

Salt to taste

Pepper powder 1 tsp

Oregano 1tsp

Red chill flakes 1 tsp


PREPARATION :

Heat butter in a pan on medium heat, add flour, stir & cook well ensuring the color doesn't change.


Add the milk slowly and gradually, keep whisking continuously to avoid lumps.


Add salt, pepper, and 100 gms of grated processed cheese, mix well and cook further for 2-3 minutes, then sauce has to be smooth and without lumps. Keep it aside.


In a wok on medium heat, add olive oil and the veggies with salt, pepper, oregano, and chili flakes. 


Saute the vegetables for around 3-4 minutes then add the prepared white sauce, mix well, and cook for 2-3 minutes.


Pour the veggies with white sauce in the baking dish and grate the remaining 100 gms cheese over it.


Bake this in a preheated oven for 12-15 minutes @ 180°c.


Serve hot with freshly toasted garlic bread.
