INGREDIENTSÂ :
For dough:
All-purpose flour 1/2 cup
Wheat flour 1/2 cup
Baking powder 1 tsp
Baking soda 1/4 tsp
Salt to taste
Yogurt/ curd 2 tbsp
Warm Milk 1/4 cup / 80 ml
Vinegar 1 tsp
Mixed herbs 1 tsp
Chilly flakes 1/2 tsp
Oil (flavorless) 2 tsp
Cornmeal 2 tbsp
Garlic butter:
Butter 50 gms
Garlic 4-5 cloves (chopped/grated)
Mixed herbs 1 tsp
Coriander leaves 1 tbsp (chopped)
Salt to taste
For filling:
Mozzarella cheese 1/2 cup (grated)
Sweet corn kernels 2 tbsp (boiled)
Jalapenos 2 tbsp (chopped) (optional)
Oregano 1 tsp
Pepper powder to taste
Salt to taste
PREPARATION:
In a mixing bowl take the flour, baking powder, baking soda, salt, and give it a stir. Then add yogurt, vinegar, mixed herb, and chili flakes, adding milk gradually to form a soft and smooth dough.
Add the oil and knead the dough for a few minutes and then cover it and let it rest for 1 hour.
Meanwhile make the garlic butter by mixing in garlic, mixed herbs, coriander, and salt to the butter and keep it aside.
After 1 hour divide the dough into 2 equal part, now on the surface where you would roll the dough spread a generous amount of cornmeal (makai ka atta) this will add a crunchy layer over the garlic sticks😉 now roll one of the dough into a round shape spread the prepared garlic butter in the center put some grated cheese few boiled corn, chopped jalapenos sprinkle it with salt, pepper, and oregano.
Now apply some water in the border and fold it to make it a semi-circle. Seal the border well or else it will open while baking, now make cuts as a stick over it but don't cut it through only on the top and apply some more garlic butter over it😊.
Following the same make the second one and then bake both together in one baking tray in a preheated oven @180°C for 25 minutes.
