Butter Chicken or Murg Makhani recipe is a classic and easy chicken recipe from the Indian sub-continent prepared in creamy tomato sauce.

INGREDIENTS :
For Marination :
Chicken 1 kg (cut into pieces and cleaned)
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Red chilly powder 2 tsp
Salt to taste
For gravy :
Tomatoes 4 medium size (chopped)
Onions 3 medium size (chopped)
Garlic paste 1 tbsp
Cashew nuts 20-25
Hot Water 1/2 cup
Fresh cream 5 tbsp
Garam masala powder 1 tsp
Kasuri methi 1 tbsp (roasted and crushed)
Red chili powder 1 tsp
Kashmiri chilly powder 1 tsp
Salt to taste
Mace 2
Whole green cardamom 4
Tomato ketchup 2 tbsp
Vegetable oil 7 tbsp
Butter 60 gms
Coriander leaves for garnish (chopped)
INSTRUCTIONS :
In a bowl marinate the chicken with salt, chill powder, garlic and ginger paste keep it aside for half an hour.
In a frying pan take 4 tbsp of oil and 30 gms of butter add the onions, fry it for 2-3 minutes then add the mace, green cardamom, garlic paste,tomatoes, cashew nuts, salt and chilly powder, fry for 3-4 minutes then add 1/2 cup of water and stir it all well.
Cover and cook for 4-5 minutes, by then the tomatoes will turn soft and pulpy. Turn
Off the flame and allow the masala to cool down a little.
Meanwhile, in a frying pan add 3 tbsp of oil and fry the marinated chicken. The chicken will release water so the chicken would get cooked in that water. Slowly dry of all the water and fry the chicken into lite brown color. All this will take around 7-10minutes.
Grind the masala into a smooth paste and strain it with a strainer ( u can use the gravy as it is but straining gives an extra creamy texture😋).
Now add the gravy on to the fried chicken and mix it well.
Add the garam masala powder, kasuri methi, tomato ketchup, fresh cream and the remaining butter. Give it a good mix at this stage if u want u can add 1/2 cup of water and check for the salt of required.
Cover the pan and cook on low flame for around 10 minutes.
Check if the chicken is completely cooked then garnish with freshly chopped coriander and and extra dollop of butter of you like😊.
Serve it with naan, roti, paratha or rice of your choice.
